2 bags of spring mix or baby greens salad mix (I usually use Dole brand)
4 green onions sliced or 3/4 cup onion chives chopped
1 15 oz can mandarin oranges drained
1 c. sliced strawberries
1/2 c. cashew pieces
1/2 c. sugar

Dressing
1/2 c. canola oil
2 tbsp. sugar
1 tsp. salt
1 tbsp. vinegar
2 tbsp. chopped flat parsley if you have it
dash pepper

Directions:
Directions:
Put cashews and sugar in a skillet over medium heat and stir slowly and constantly until sugar dissolves and coats nuts and then pour out onto wax paper and let cool. If you are using whole nuts after glazing and they are cool, chop or put into a food processor. The recipe calls for sliced almonds, but I use cashews. Pecans or walnuts are nice also. Add more or less for your taste. Just prior to serving, add oranges, strawberries, nuts and dressing. You can add the onion/chives any time. Toss gently to coat and serve. This serves 8-10 depending on serving size.
