1/2 cup panko bread crumbs
1/2 cup grated parmesan cheese
(can also use French's onions)
1 12 oz package whole wheat blend egg noodles (or whatever pasta you have around)
2 5 oz cans salmon- (I used 16 oz regular salmon)
1 cup frozen peas, thawed (or edamame)
1 tbsp unsalted butter
8 oz mushrooms coarsely chopped (I double this)
1/4 tsp salt
1/4 tsp pepper
1/4 tsp onion powder
3 tbsp olive oil
1/4 cup flour
3 1/2 cups milk
2 tbsp soy sauce
1/2 cup sour cream (I use plain Greek yogurt)

Directions:
Directions:
1. Combine bread crumbs and cheese and set aside.
2. Cook pasta, drain, add salmon and peas, set aside.
3. Heat butter in a pan, add mushrooms and spices, cook about 5 minutes.
4. Stir in olive oil and then whisk in flour to form a roux.
5. Add milk slowly and bring to a boil
6. Simmer until thickened.
7. Remove from heat and add yogurt.
8. Combine all ingredients and pour into baking dish. Top with breadcrumb mixture
9. Bake until bubbly and golden brown- 15-17 minutes
