EGG MIXTURE
6 eggs, beaten
1 tsp. vanilla
1 tsp. salt
2 Tbsp. sugar
1 1/2 c. milk

STUFF MIXTURE
8 oz. cream cheese
1 tsp. vanilla
1/2 c. pecans or walnuts, chopped

APRICOT SAUCE
12 oz. apricot preserves
1/2 c. orange juice

Egg Mixture: Blend all ingredients. Put into shallow pie plate.

Stuff Mixture: Beat together in mixer until blended. Add nuts. Spread filling thinly on a slice of firm bread sliced 1" thick. Place second slice of bread on top, making a sandwich. Dip sandwich in egg mixture and place on greased electric griddle or skillet. Sprinkle cinnamon on top of sandwich and cook until browned on both sides. Cut sandwich diagonally and place on serving plate.

Apricot Sauce: Mix and warm in the microwave. Drizzle over sandwich.

This is a very easy recipe. It also holds well. The sandwiches can be put in a 200º oven on a cookie sheet and the apricot sauce can be poured over when ready to serve.
