When I make things like enchiladas and lasagna I always make enough for two 9 x 9 pans and freeze one. Before assembling I line one pan with foil and then spray the top of the foil with cooking spray After assembly, but before cooking, I cover and put the whole pan in the freezer overnight.

The next morning I remove the frozen entree from the pan, remove the foil, and put it in a gallon size freezer bag. When you are ready to bake it fits perfectly in your pan and you don't have to store your pan in the freezer!

If 13 x 9 fits your family better that will work too, The frozen product won't fit in a zip top bag, but can be wrapped to prevent freezer burn.

I also buy pesto, salsa, and sauces in bulk, freeze them in ice trays and store the cubes in freezer bags. This makes portioning easy, they last for months, and it's much less expensive.
