1 cup pineapple drained
1 box strawberry cake mix
1 container cream cheese frosting
1 cup coconut
2 tsp. grated orange peel
extra coconut and fresh strawberries
Directions:
Directions:
Heat oven to 350. Spray 13x9 inch pan.
Add water and reserved pineapple juice to measure 1 and 1/4 cups. Mix cake as directed on box, using pineapple and water mixture; add 2 teaspoons orange peel and 1/2 cup coconut. Pour in pan.
Bake until done Run knife down sides of pan to loosen cake. Cool about an hour. Stir together pineapple, frosting, remaining coconut and 2 tsp. orange peel. Frost cake. Garnish with coconut and fresh strawberries, chopped nuts optional.
