3 T olive oil
1 c chopped carrots
1 c chopped onions
1 c chopped celery
1 8 oz. pkg frozen chopped spinach, cooked and drained
3 garlic cloves, chopped
1 19 oz. can cannelini beans drained and rinsed
1 15 oz. can red kidney beans, drained and rinsed
1 15 oz. can black beans, drained and rinsed
1 32 oz. box low sodium chicken broth
1t dried thyme
1 t dried oregano
1 t. cracked pepper
salt to taste

Directions:
Directions:
Saute carrots, onions, celery in olive oil until tender. Add garlic and spinach. Cook for three minutes, stirring frequently. Add the 3 cans of prepared beans along with the dried spices. Stir, incorporating all flavors. Add chicken broth and bring to a boil. Reduce heat and simmer for 30 minutes. Serve with fresh grated Parmesan cheese
