4 (@ 6 oz. each) salmon fillet with skin (or not) on
1 T. olive oil
3 T. Dijon mustard
3 T. maple syrup
2 T. bourbon
Salt & freshly ground pepper to taste

Rinse fillets under cold water & pat dry. In small bowl, combine oil, mustard, maple syrup & bourbon. Set aside 1/2 of glaze.
Place salmon fillets in a shallow dish and brush with remaining glaze. Refrigerate 30 minutes and up to 3 hours before broiling.
Preheat broiler to low. Coat broiler pan with nonstick cooking spray. Place salmon fillets on pan, skin side down. Season with salt & pepper. Broil about 8 minutes. Brush with reserved glaze and continue broiling, another 4 to 5 minutes, depending on thickness, until salmon is just cooked through. Remove salmon by sliding a spatula between flesh and skin. Leave skin on broiler pan. Serve immediately
