3 tablespoons softened butter
1 1/4 cups sugar
4 eggs, separated
3 tablespoons flour
dash of salt
1 1/4 cups milk
grated peels of 2 lemons
1/3 cup lemon juice
1 unbaked 9" pie shell

Directions:
Directions:
Cream together butter and sugar in a large bowl until fluffy. Beat in egg yolks, flour, salt, milk, lemon peel and juice. In small bowl with clean beaters, beat egg whites until stiff, but not dry. Fold into milk mixture. Pour into pie shell.

Bake at 375º for 15 minutes; then reduce heat to 300º and bake for 45 minutes longer or until top is golden and wooden pick comes out clean.

Cool on rack, then serve.
