2 c. sweet rice, cooked and divided
3 c. water
3 Tbsp. sugar
butter for greasing bowl
walnuts
dates, prunes, pineapple, raisins
other dried or canned fruits
1/2 can pie filling of choice

SAUCE
1 c. water
3 Tbsp. sugar
1 tsp. almond extract
1 Tbsp. cornstarch
2 Tbsp water

Directions:
Directions:
Cook sweet rice in water, bring to boil, then simmer for 20 minutes. Stir rice while it is cooking so it will not stick to the bottom of the pan. Add sugar to cooked rice and stir well.

Grease a bowl generously with butter and arrange walnuts, dates, prunes, pineapple, raisins, and three other dried or canned fruits in the bowl. Cover nuts with half of the rice. Pour 1/2 can of pie filling on top of the rice, then cover with remaining rice. Steam for 1/2 hour or more. Turn over the bowl onto a serving plate, remove bowl.

Sauce: Mix together cornstarch and 2 Tbsp. water. Set aside. Boil 1 cup water with sugar, then add almond extract and the mixture of cornstarch and water. Serve over the rice.

Note: Sweet rice is also called glutinous rice. You will find in Asian stores if not at your supermarket. I have made this is a Pyrex bowl on top of metal steamer in a larger pan that can be covered. You can also purchase a bamboo steamer.
