CRUST:
1 1/2 cup flour
1/2 cup quick-cooking oats
1/2 cup sugar
3/4 cup butter, slightly softened

FILLING:
4 eggs
1 1/2 cup sugar
1/4 cup flour
1 tbsp. finely shredded lemon peel
1/3 cup fresh lemon juice
Sifted powdered sugar or Lemon Glaze (below)

Directions:
Directions:
Combine flour, oats and sugar. Cut in butter until well blended. Press evenly in bottom of 13x9x2-inch baking pan. Bake in 350º oven 15 minutes.

Meanwhile for filling, in same bowl combine eggs, the 1 1/2 cup sugar, 1/4 cup flour, lemon peel and lemon juice. Beat until well blended. Pour evenly over hot crust and return to hot oven for 20 minutes. Cool completely in pan. Sprinkle with powdered sugar or brush with lemon glaze. Cut in squares to serve.

LEMON GLAZE: In small bowl beat together 1 1/2 cups powdered sugar and 1 tbsp fresh lemon juice. Whisk in small amount water as necessary to get a thin glaze. Brush lightly over cooled bars. Makes about 36 bars.

Nutrients per bar: 115 calories, 2 g protein, 17 g carbohydrates, .5 g fiber, 33 mg cholesterol, 4 g fat, 35 mg sodium.
