9" pie pastry, cooked
Pie filling: 1 1/2 c sugar
1/3 c + 2 T cornstarch
1 1/2 c water
3 egg yolks, slightly beaten
3 T butter, 2 tsp lemon peel
1/2 c lemon juice
Meringue: 3 egg whites
1/4 tsp cream of tarter
6 T sugar
1/2 tsp vanilla

Directions:
Mix sugar and cornstarch in a pan and slowly add water, bring to a boil and boil 1 minute. Add 1/2 of mixture into egg yolk then add all of egg yolk mixture, slowly, back into pan of filling. Boil 1 more minute, remove from heat and add butter, lemon peel, and juice. Stir until butter is melted and well mixed, pour into baked pie shell. Make meringue: Beat egg whites and cream of tarter until foamy, beating sugar 1 T at a time, continue beating until stiff and glossy, beat in vanilla. Spoon on top of pie, making sure meringue seals edges, make peaks with spoon. Bake 400º 5-10 min, just until tops of peaks brown
