5-6 large potatoes
1 2/3 c. milk, warmed
3 T. butter
2 T. flour
3-4 oz. grated Swiss cheese
1 c. Parmesan

Directions:
Directions:
Bake potatoes for 1 hour at 375º. Melt butter with flour, add 1 cup milk, stirring with a whisk until thickened. Add cheese and salt & pepper, mix until smooth.
Add 2/3 cup milk and 1 T. butter to potato pulp. Beat until fluffy. Fill shells and form a trench down the middle. Fill with cheese sauce and sprinkle with parmesan. Bake at 350º for 20 minutes, then at 400º until light golden brown.
