1.5 lbs of ground beef
.5 lbs of ground pork
.25 lbs of ground veal
1 small yellow onion
Clove of garlic
1/3 cup olive oil
1/2 cup raisins
1/2 cup pine nuts (pignoli’s)
3/4 cup of bread crumbs
1 or 2 eggs
Salt and Pepper to taste
Couple of dashes of Worcestershire sauce
Grate some parmigiano reggiano cheese

Combine all of the meat into large bowl. Add raisins, pine nuts, breadcrumbs, eggs, Worcestershire and grated cheese. Mix all together by hand. Judge the moistness of the mixture, if too dry, add another egg. If too wet, add more breadcrumbs. It should be the right texture to roll into a small ball and not fall apart but not wet.

Hand roll the balls, I usually do slightly larger than golf balls, and lay out on a flat area. Should make about 2-3 dozen with that amount of meat.

Warm up the olive oil in a large pot. Slice up all of the garlic and onion. Use half of what you have into the pot with the olive oil and slightly brown.

Depending on the size of the pot, add about 6-8 meatballs at a time and thoroughly brown the balls all around on med-hi heat. Remove and do another serving.

When the onion and garlic get too dark, remove and put a fresh set in and continue to brown. You don’t want the dark bits going into your sauce – too bitter.

When all done, use the pan drippings in your sauce and cook your meatballs in with your favorite tomato sauce recipe. Let simmer in your sauce as long as you need to get it done.
