Grandma Mary's Zucchini & Linguine Recipe

4 Zucchini (smaller ones are tastier)
1/4 cup Olive Oil
1 lb Linguine
3-4 cloves of Garlic (sliced)
Salt & Pepper to taste
Good quality parmigiano cheese to grate

Directions:
Directions:
In frying pan, saute sliced zucchini and garlic in oil until lightly browned and the zucchini gets soft but NOT mushy. Set pan aside. In seperate pot, cook the Linguine to desired conistency (al-dente). Do not drain. Remove Linguine by the forkfull into the pan with the zucchini so that you get some of the water from the pot into the zucchini pan. Blend thoroughly. Put all on to a serving platter and sprinkle with graded locatelli cheese (or your favorate parmigiano). Salt and pepper to taste.
