1 C. flour
1 stick butter (1/2 C) (softened)
2 T. sugar
1/2 C. chopped pecans
1 - 8oz cream cheese
2/3 C. powdered sugar
9 oz container cool whip (divided)
2 pkg instant pistachio pudding
2 1/2 C. cold milk

Directions:
FIRST LAYER, (Crust) Mix flour,butter, sugar & pecans. Press into a 9 x 13 pan. Bake @ 375º for 15 min. or until lightly brown. (Cool)
SECOND LAYER / Mix cream cheese, powdered sugar & 1/2 of cool whip. Spread over crust. THIRD LAYER / Mix with wire whip, instant pudding & milk until slightly thick. Pour over cream cheese layer. top with remaining cool whip. Chill & serve.

This is a camp favorite, everybody loves it! Even the name! It is a good alternative for those unfortunate few who don't like chocolate! Very light and refreshing.
