6 oz Semi or bittersweet chocolate
1/2 c sugar
1/2 c boiling water
2 lg eggs, separated
1 tsp vanilla
sash of salt
1 c heavy cream

Directions:
Directions:
Cut chocolate into small chunks and place in bowl, add sugar, add boiling water and stir until chocolate is melted. Add egg yolks and vanilla.
In a medium bowl beat egg whites with a dash of salt until stiff peaks form. In another bowl , with the same beaters, beat cream until stiff. Fold chocolate mixture into beaten egg whites then fold in about three quarters of whipped cream, cover and refrigerate remaining cream for topping. Spoon chocolate mousse into 6 dishes, cover and refrigerate until chilled and set, about 2 hrs.
