1 large onion chopped,
1 stick of celery chopped,
1 small carrot chopped,
1 chopped garlic clove,
3 or 4 cups of frozen peas,
approx 1 1/2 pints of vegetable or chicken stock,
1 cup of basil leaves or 2 to 3 tablespoons of pesto,
salt and pepper,
1 handful Parmesan cheese

Directions:

Cook the onions, celery, garlic and carrots for 30 mins over a low heat until soft. Stir to prevent sticking and don't let them brown.

Add the heated stock and peas, season and bring to the boil. Add the basil leaves if using, and simmer for 10 minutes.

Blend the soup until smooth. Stir in the pesto if using, serve sprinkled with freshly grated Parmesan.
