Fresh trout
Lemon pepper
Johnnies seasoning
Garlic salt
Oil
Pancake mix, or cornmeal/flour mix

Clean, wash & rinse fresh trout. Take about 2 C pancake mix & put in ziplock bag. Add all seasoning. Mix in bag. Put trout (one at a time) in bag & shake. Have hot skillet ready with oil or melted butter. Put trout in pan , fry on medium heat until brown & crispy. Try to turn only once or twice in the cooking process; as it gets done, the meat will begin to come off the bones so turn carefully so fish stays whole. If you leave the head on, the fish will be done when the eyes turn white.

Of course, this is the absolutely best way to eat our fresh caught cutthroat trout! Straight from the river to the frying pan...doesn't get any better than that! To round out the meal, creamy cole slaw or frog eye salad, cornbread or corn fritters, baked potatoes or Vickys scalloped potatoes in the Dutch oven! Chocolate Éclair Dessert (no bake) will be a perfect ending!
