1/4 cup butter
1/4 cup Parmesan cheese
1 1/2 - 2 cups milk
1 onion, chopped
1 red pepper, chopped
1 pkg shrimp, peeled
1 pkg scallops
salt and pepper to taste
1/2 tsp dried parsley
olive oil
Pasta of your choice (I like Spaghettini)

Boil water and cook pasta while preparing the sauce.

Over medium heat, add olive oil and onions to a pot. Cook until onions are softened and then add red pepper. Cook until red pepper is starting to soften. Add 1/2 cup water and seafood. Cover and cook until shrimp is pink, and scallops are opaque. Take off of heat.

In a small sauce pan over medium heat, melt butter. Mix in Parmesan cheese and keep stirring. Add salt, pepper and parsley. When it starts to bubble, stirring constantly, add milk 1/2 cup at a time. Once sauce thickens, add to seafood mixture and heat through - not too long though, you don't want to overcook the seafood.

Serve over pasta.
