Beef Empanadas
1 pkg La Saltena empanada dough
1/2 cup oil
2 cups chopped onions
1 cup diced red peppers
1 lb ground beef
2 tsp salt
1 tsp cumin
1 tsp mild paprika
1 tbsp oregano

Directions:
Directions:
In a large saucepan mix oil, onions and red peppers. Cook on medium heat until onions and peppers are tender. Add ground beef, cook on high until meat is cooked, stirring constantly. Remove from heat, add salt, cumin, paprika and oregano. Refrigerate for 2 hours. Remove dough from freezer to thaw for about 30 minutes. Place a spoon full of filling in the center of each pastry, fold in half and press edges together with a fork (can wet the edges to seal if needed). You can also add 1/2 cup chopped olives, 1/2 cup chopped tomatoes or 2 chopped hard boiled eggs if you like.

To bake, place empanandas on a greased cookie sheet. Bake at 400 for 15 minuets or until golden brown.

To fry, pour 3 cups of oil in a large saucepan. Fry empanandas in oil on medium heat until golden brown. Remove from oil with tongs and place on paper towels.

Notes: You can buy the dough at El Mate on Main Street in Layton or check other Mexican markets. The dough is made specifically for baking or frying so make sure you buy the kind you want.



Ham & Cheese Empanadas
1 pkg oven empanada dough
1 pkg cubed ham
1 pkg shredded cheese, as much or as little you prefer

Mix ham and cheese. Place a spoon full onto each pastry. Fold in half and press edges together with a fork. Bake on 400 for 15 minuets or until golden brown.
