1 lb. asparagus, trimmed
1 T. olive oil
2 T. pine nuts, toasted
1/4 c. shaved Parmesan cheese

Vinaigrette Dressing
2 T. finely chopped shallots
2 tsp. lemon zest
1 T. fresh lemon juice
1 T. drained capers
1 T. chopped flat-leaf parsley
3 T. extra virgin olive oil
fresh ground salt and pepper to taste

Brush asparagus with olive oil & season with salt. Grill over med. heat turning often until asparagus are just tender, about 8-10 min. Transfer asparagus to a warm plate, drizzle with vinaigrette, sprinkle with pine nuts & top with Parmesan cheese.

Vinaigrette Dressing: Mix the shallots, lemon zest, lemon juice, capers & parsley in sm. bowl. Whisk in olive oil & season to taste with freshly ground salt & pepper. Set aside while you grill the asparagus.
