3/4 lb. beef or chicken cut into thin strips
1 1.12-oz. pkg. fajitas seasoning mix
1 c. water
1 T. olive oil
1 bell pepper, sliced
1 onion, sliced
1 green onion, chopped
1 T. minced garlic
1 T. pickled jalapeņos, diced
1 tsp. cumin seed
1 tsp. dried cilantro leaves
1/2 tsp. chili powder
1 16-oz. can nonfat refried beans
1 2.25-oz. can sliced black olives
1 c. cheddar cheese, shredded
1 c. nonfat sour cream
4 tortillas

Slice meat into thin strips (we use leftover cooked beef or chicken). If using uncooked meat, brown it first in olive oil. Dissolve fajita seasoning mix in one cup of hot water. Add meat and let sit for 15 minutes. Slice bell pepper and onion into thin strips. Combine with garlic, jalapeņos, cumin, cilantro and chili powder and saute in oil until peppers and onions are tender. Add a little water if mixture starts to stick to frying pan. Pour meat mixture into the pan and simmer covered until hot. Serve by spreading hot refried beans over warm tortillas, then topping with meat/vegetable mixture, olives, cheese and sour cream.
