2 c cooked rice
1 pkg frozen chopped broccoli, cooked
1 large onion, chopped
1/2 can cream of chicken soup, undiluted
1/2 lb Velvetta cheese, cut up
1 c water chestnuts, sliced
1/2 c milk
1 tsp salt
1/2 tsp pepper

Directions:
Directions:
Cook rice and broccoli. Saute onion in butter until limp. Combine those 3 ingredients with Velvetta ( save some for top), undiluted soup, and water chestnuts. Add milk and mix. Top with remaining cheese. Bake in greased 1 1/2 quart casserole 30 minutes at 350º. Serves 4

To serve 8, double all but chestnuts and cheese. Male guests always come back for seconds!
