Ingredients:
Ingredients:
3 cans of crushed tomatoes (any brand)
1 large clove of garlic, 2 if it's small
2 slices of white onions
2 pinches of crushed red pepper
A drizzle of extra virgin olive oil (enough to cover the bottom of the pot)
You can add a can of tomato paste if you want it a little on the thicker side!
THIS RECIPE IS GOOD FOR A POUND OF PASTA AND MEATBALLS OR CHICKEN PARM (there will be left over sauce)

Directions:
Directions:
Prep: make sure this is done ahead of time before step 1. Step is really fast.
Mince the onion and the garlic, fine, it usually melts in the sauce.
Open up the cans of crushed tomatoes.

Cooking Steps
1. Drizzle a little of the olive oil on the bottom of your sauce pan, heat for 2 minutes on medium high, add the garlic and onions, Turn down to Medium and sauté for 30 to 45 seconds!!! THAT’S IT!!!!!

2. Pour the crushed tomatoes right on top of the garlic and onions and stir a few times. (add the paste if you choose)
Add the pinches of crushed red pepper. Stir a few times, and COVER.
3. Leave on medium for 15 to 20 minutes, (it will be boiling) stirring every few minutes.
***I usually tilt the cover to let moisture out during the next step (STEP 4), It will help the sauce thicken!!!!!!***
4. Turn Down to Medium/Low, for 15 or 20 minutes stirring every few minutes. THEN TURN OFF.

YOU CAN ADD THE FOLLOWING WHEN YOU START STEP FOUR!!!
***** - This step is where you add meatballs to your sauce (partially cooked of course) cook 25-30 min.*****
***** - If you are going to add ground beef, add during Step 4 also, just stir more frequently cook for 30-35 min.*****
If you are Making Chicken Parmesan take out 1 ˝ cups of sauce BEFORE STEP 4, it will cook in the oven with chicken.
WE USUALLY PUT THE WATER FOR PASTA ON AT STEP FOUR TOO.

LET SAUCE SIT COVERED 5 – 10 Minutes before serving. I usually turn it off when the Pasta is ready to drain. Total time around an hour to an hour and a half start to finish. ENJOY!!!!

Personal Notes:
The sauce has 30 to 40 years in the making with my special additions
