1 9-in. pie crust

For Coconut Filling:
6 T. cornstarch
1 3/4 c. milk
2 egg yolks
1/2 c. canned coconut milk
1 c. sweetened flake coconut
3/4 c. sugar
1/4 tsp. salt





For Meringue:
2/3 c. egg whites
1 c. sugar
1/4 tsp. baking powder

Directions:
Directions:
Place pie crust in a pie pan and bake according to package directions until golden brown (about 11-13 minutes at 450º). Cool before adding filling.

For Filling: Dissolve cornstarch in milk, add egg yolks and mix well. Add other ingredients and cook over medium-high heat stirring constantly until thickened. Lower heat to medium and slowly bring to boil, stirring vigorously. Remove from heat and pour into pie shell.

For Meringue: Beat egg whites with electric mixer on high speed until stiff. Slowly add sugar and baking powder while continuing to beat at high speed.

Spread meringue evenly over pie filling. Bake in preheated 350º oven about 15 minutes or until meringue is light brown. Serve chilled.
