orange roughy fillets, individually packaged and frozen
virgin olive oil
Emeril's fish rub
seasoning salt
garlic powder

Directions:
Directions:
Thaw Orange Roughy by soaking in shallow pan of cold water. Lightly coat both sides of fillets with Olive Oil. Lightly sprinkle both sides with Fish Rub, Seasoning Salt and Garlic Powder.

Oven: 400º for 4-6 minutes each side.
Grill: 10-12 minutes on a hot grill.
Skillet: Medium-high temp, 2-4 minutes each side.
