21 C. unpared cucumbers
9 C. carrots, peeled
6 C. chopped onions
4 T salt
9 C. sugar
9 C. vinegar
3 T. celery seed
3 T. mustard seed

Directions:
Directions:
Coarsely grind carrots, cucumbers and onions. Combine vegetables & salt. Let stand 3 hours. Drain.
In a large pan combine sugar, vinegar, celery, seed, mustard seed. Bring to a boil. Add ground vegetables & simmer for 20 min. Pour into hot jars, leaving 1/2" headspace, place lids and tighten. Process in a hot water bath for 5 min. Makes approximately. 18 pints. May divide recipe in half for 9 pints.

We like this relish. Tastes good with meats and casseroles, in potato salad and pea salad, and good on hamburgers and hot dogs.
