6 cups flour (keep 1cup aside to be added gradually, if needed)
7 large eggs - room temperature
12 tsp baking powder
1 cup margarine - room temperature
2 tsp vanilla
2 tsp lemon peel or orange peel
Sugar Sprinkles - optional

Directions:
Directions:
Use large Kitchenaid Mixer with beating attachment.
Mix margarine, sugar and eggs until frothy.
Add baking powder, vanilla, lemon or orange peel.

Switch beating attachment & use kneading attachment:

Add 6 cups flour gradually - use additional flour if mixture is too wet - Knead dough thoroughly for about 3-4 minutes.
Empty bowl onto a cutting board adding scraps from bottom of bowl. Knead together.
Put in a bowl, use a knife & make a cross on top of the dough, cover with plastic wrap and let rest for appx 1 hour in the refrigerator.

To make cookies, take a small chunk of dough and roll out making long stands. Cut into small pieces, about 1/2 inch. Start to roll those small pieces to about 5 inches wide. Form cookies into different shapes, use your imagination.
Optional: Dip into sugar sprinkles, put on baking sheet.
Bake at 350º until lightly brown. Remove, put on a wire rack to cool.
