1/4 cp caramel ice cream topping
1 unbaked pastry shell, 9 inches
2 cps mashed sweet potatoes
3/4 cp eggnog
1 egg, lightly beaten
2 tbsps butter, melted
1/2 tsp vanilla extract
1/2 cp granulated sugar
1/2 cp brown sugar
3/4 tsp ground cinnamon

Topping:
1/2 cp flaked coconut
1/3 cp flour
1/4 cp brown sugar
1/3 cp cold butter
1/4 cp chopped pecans

Directions:
Directions:
1) Carefully spread caramel topping over bottom of pastry shell; set aside.
2) In a small bowl, combine sweet potatoes, eggnog, egg, butter and vanilla.
3) Stir in sugars and cinnamon.
4) Carefully spoon over caramel layer.
5) Bake at 400f for 15 mins.
6) Reduce heat to 350f; bake for 30 mins longer.
7) Meanwhile in a small bowl, combine the coconut, flour and brown sugar.
8) Cut in butter until crumbly; stir in pecans.
9) Sprinkle over pie.
10) Bake for 10 to 15 mins or until knife inserted near center comes out clean and topping is golden brown, (cover edges with foil to prevent over browning if necessary)
11) Cool on wire rack.
12) Store in refrigerator.
