5 c. sugar
5 c. water
7 1/2 c cider vinegar
5 tsp. salt

Directions:
Directions:
Heat the above ingredients until sugar dissolves. Taste the syrup. (If you want it more sour, add a little more vinegar. Sweeter, add a little more sugar to suit your taste). Put in beets and heat. When they start to boil, turn down the heat and pack in sterile jars. Wipe off top and seal.
This should be enough syrup for 9 or 10 quarts.
