1 - boneless rump roast (4 1/2 - 5 lbs)
2 garlic cloves, minced
2 T. Dijon mustard
2 T. lemon juice
2 T. olive oil or vegetable oil
2 T. Worcestershire sauce
1 T. dried parsley flakes
1 tsp. dried basil
1 tsp. salt
1 tsp. coarsely ground pepper
1/2 tsp. dried tarragon
1/2 tsp. dried thyme
2 1/3 C. water, (divided)
2 tsp. beef bouillon
1/4 to 1/3 C. flour

Directions:
Place roast with flat side up in an ungreased roasting pan. Combine garlic,Dijon mustard,lemon juice,oil, Worcestershire sauce. Pour over roast. Combine parsley, Basil, salt, pepper, tarragon & thyme; rub over roast. Bake uncovered @ 325º for 1 3/4 to 2 1/4 hours, or until meat reaches desired doneness, meat thermometer should read 140º rare, 160º medium, 170 well. Remove from pan. Add 2 C. water & bouillon to pan drippings, bring to boil. Combine flour & remaining water until smooth, gradually add to pan. Cook & stir until bubbly & thickened. Slice roast; serve with gravy.

We use this recipe with any roast, beef, elk & deer, it tenderizes and gives a wonderful flavor to the meat and gravy.
We serve with mashed potatoes, cooked carrots, Debbies quick rolls and Mike and Jims salas. Try Chocolate Mayonnaise Cake with white frosting using almond flavoring for dessert!
