1 1/2 lb. bacon or pan sausage
2 T. water
1 can hominy, drained
1 tsp. salt
4 eggs
1/3 c. milk
pepper to taste

Directions:
Directions:
Place sausage (or bacon) & water in cold skillet, cover tightly, and cook over low heat for 5 min. Remove cover & cook until done. Remove & keep warm. Pour off all but 1/4 c. drippings. Add hominy, salt & pepper, & heat thoroughly. Beat eggs & milk & add to hominy. Cook over low heat just until eggs are set, stirring occasionally. Serve on platter with sausage (or bacon).
