8 lb beef round steak (elk or deer works great)
oil
2 C. chopped onion
2 cloves garlic, minced
2 - cans (6oz) sliced mushrooms
4 - cans cream of mushroom soup
1 - can condensed beef broth
1- can (6oz) tomato paste
3 C. sour cream

Directions:
Directions:
Partially freeze meat, cut into thin strips, trim all fat. In a large skillet brown meat in oil. Add onion, garlic,mushrooms, soup & tomato paste. Blend together, cover, simmer for 1 1/2 - 2 hours or until meat is tender. Stir occasionally to make sure it doesn't scorch. Turn heat down & slowly add sour cream, heat through but do not boil. Serve over noodles or rice.
