4 boneless, skinless chicken breast halves
2 Tbs. all purpose flour
1 Tbs. vegetable oil
1/4 c. slivered almonds
1/2 c. dry white wine or chicken broth
4 Tbs. unsalted butter, sliced
1/4 c. chopped scallions

Directions:
Directions:
Pound each chicken breast half between 2 sheets of plastic wrap with meat mallet or rolling pin until 1/2 inch thick. Then, season with salt and pepper. Place flour in a shallow dish and dredge both sides of each cutlet in flour.

Heat oil in large saute' pan over medium heat. Arrange cutlets in pan and saute until browned on each side 7 - 12 minutes. Remove cutlets from pan and keep warm

Add almonds to pan and saute' until toasted, about 3 minutes.

Deglaze pan with wine, scraping up browned bits from bottom of pan. Simmer until wine thickens slightly, about 3 minutes.

Off heat stir in butter until melted and sauce thickens. Add scallions to sauce. top chicken breasts with sauce
