8 10-in. flour tortillas
1 c. low-fat ham, chopped
2 c. panela or monterey jack cheese, shredded
1 c. cotija or feta cheese, shredded
1/2 c. fresh cilantro leaves, chopped
1 c. fresh pineapple, chopped or 8 oz. can crushed pineapple, drained

MANGO SALSA
2 ripe mangoes, peeled, seeded and scored
2 Tbsp. red onion, minced
1 Tbsp. fresh cilantro leaves,chopped
1 serrano chili, seeded and minced
1/4 c. fresh lime juice

Coat a large skillet with nonstick cooking spray and heat over medium heat. Place tortilla in pan and sprinkle with one-quarter of the ham, cheeses, cilantro and pineapple. Top with another tortilla and cook until golden brown. Remove from pan and cut into 12 wedges. Repeat process until all tortillas are used. For Salsa, combine all ingredients and serve with hot quesadillas.
