Root Beer Cookies Recipe

1 cup butter
2 cups dark brown sugar
2 eggs
2 tsp. root beer concentrate
3 1/2 cups flour
1 tsp. baking soda
1 tsp. salt
1/8 cup water

Frosting:
1 cup butter
3 cups powdered sugar
2 tsp. root beer concentrate
2 Tbsp. hot water… more or less

Directions:
Directions:
Cream butter and brown sugar until very light and fluffy. Add the eggs and beat well. Add the root beer concentrate. Whisk the dry ingredients together. Add a little at a time to the creamed mixture. The dough should be slightly sticky. If too dry add a little water at a time until desired consistency. If the dough is too sticky refrigerate for at least an hour.

Preheat oven to 350 degrees and lightly grease several baking sheets. Roll into small 1 inch balls.

Place them on the pan leaving a bit of space between the cookies. Gently press the tops of dough. Bake 6-9 minutes.

Frosting:
Beat butter on high with electric mixer until fluffy. Add a little powdered sugar and the root beer extract. Beat until smooth. Add remaining sugar and alternate with a little hot water until a nice spreading consistency has been reached.

Frost the cooled cookies and let stand a few minutes to let the frosting set up. If you leave out the root beer extract you will have a tasty, soft brown sugar cookie. Makes about 4 dozen cookies.
