Fresh Arugula

Lemon Vinaigrette
1/4 cup freshly squeezed lemon juice (2 lemons)
1/2 cup olive oil
1/2 tsp salt
1/4 tsp pepper

1/4 pound chunk Parmesan cheese

Directions:
Directions:
Whisk together the lemon juice, olive oil, salt and pepper.

Toss the Arugula salad with dressing and shaved slices of Parmesan cheese.

For a meal, add a piece of the Parmesan Chicken (in the Main Course - Meat Fish) to the top of the salad.
