1 1/2 c. uncooked elbow macaroni
3 c. broccoli florets, frozen
3 c. cauliflowerets, frozen
3 large carrots, halved and thinly sliced
2 celery ribs, sliced
1 small onion
1 Tbsp. butter
1/4 c. flour
1 c. milk
1 c. chicken broth
3 c. sharp cheddar cheese, grated
1 Tbsp. dijon mustard
1/2 tsp. salt
1/2 tsp. pepper

Directions:
Directions:
Cook macaroni, adding veggies during the last 6 minutes. Drain and put in 9x13" baking dish. Saute’ onion in butter. Sprinkle with flour and stir until blended. Gradually stir in milk and broth. Bring to boil and cook and stir for 2 minutes or until thickened. Stir in cheese, mustard, salt and pepper. Pour over macaroni mixture and stir to coat. Bake uncovered at 350 º for 30 minutes, or in crockpot on low setting for 3 hours.
