3 c. flour
1/2 c. butter
1/2 c. crisco
1 tsp. salt
1/2 c. ice water, more if flour is too stiff

Directions:
Finely cut flour, butter, crisco and salt. Add water and stir only until flour is wet and somewhat smooth. Divide into 4 parts. Sprinkle flour on flat surface and roll each crust carefully. The less rolling and handling, the better. Place crust in pie plates.

Note: Cream Pies require a baked crust before adding filling. Bake Crust at 425º for 15-20 minutes.

If making a 2-crust pie, once the top crust is on, scallop edges. Sprinkle milk very lightly over top crust and then cover lightly with sugar. Bake at 350º for 75 minutes.

The summers of my Junior and Senior years I was a server at the Titonka Café. One day the owner, Meno Fuls, asked if I would be able to bake pies. I agreed to do so. My Mother was nervous about the prospect of me taking on that responsibility, but it didn't phase me one bit! I had no doubt I could do it because after all, at one time my Aunts Ann and Ida owned that restaurant and that gave me all the confidence I needed. This was the trusty crust recipe I used. My Dad was my greatest supporter and used my baking as an excuse to bring in customers for pie.
