1 large eggplant
1 large onion, chopped
1/4 stick margarine
1 C. bread crumbs
Salt and pepper to taste

Directions:
Directions:
Peel, cut and dice eggplant and soak in seasoned water. Cook onion in margarine until wilted. Add eggplant and cook slowly until very tender. Stir in half of bread crumbs. Put in a casserole, sprinkle remaining bread crumbs on top.

Bake in 350º oven until lightly brown.
