2 T. oil
1/4 c. onion
2 T. green pepper
1 large or two small garlic cloves, minced
2 T. minced parsley
Flesh of one large egg plant
Shredded cheese of your choice

Directions:
Directions:
Cut egg plant flesh in half scrape flesh from shell, chop flesh, saute all together for 15 minutes. Stuff mixture into the shells and bake at 350º for 20 minutes. Sprinkle shredded cheese on top 5 minutes before serving.
