1-1/2 pounds chopped, peeled sweet potatoes
1 bunch scallions, cut into 2-inch pieces
4 crushed garlic cloves
1 T fresh thyme, or 1 tsp dried
1/4 olive oil
Salt and pepper

Combine all ingredients. Place on a sheet of foil and fold up. Grill over low heat until the potatoes are tender and start to brown, about 20-25 minutes.

Found this recipe in "Food Network Magazine" last summer. So easy to add these to the grill when you are grillin' anyway. So good. Be sure to let them get a little brown for the best flavor.
