(Baked) Herb Rice Recipe

Olive oil, to just cover bottom of pan
1/2 cup onion, chopped
1 tsp garlic, minced
2 cups white rice
1/4 tsp Salt
Fresh ground Pepper to taste
3 cups Chicken Stock
Herbs (parsley, basil, tarragon, chives, etc)

Preheat oven to 350 degrees

In an oven-proof sauce pan, heat oil. Add onion and cook 4-5 minutes. Then add garlic and cook another 30 seconds. Add rice and mix with onion, garlic and oil for 4-5 minutes. Add salt and pepper, then chicken stock. Bring to boil. Add herbs. Cover and bake 30 minutes in 350 degree oven. Let sit 5 minutes.

Emeril LaGasse gets credit for this recipe. It is no fail rice that has wonderful flavor. No worries about watching rice on the stove. Pop it in the oven, set your timer and your done. You can mix it up with any herb you like--and mix it up with beef or fish stock.
