6 egg whites
pinch salt
1/4 tsp. cream of tartar
1 tsp. vanilla extract
1 1/2 cups superfine sugar

Preheat oven to 225 degrees.
Line 2 large baking sheets with aluminum foil.
In a large bowl, beat the egg whites until foamy.
Add the salt, cream of tartar, and vanilla, and continue beating.
Add the sugar 1 teaspoon at a time, beating for 30 seconds between each addition. When all the sugar has been added, beat for an additional 6 minutes. The egg whites should be very stiff, glossy, and extremely smooth, but not dry.

Using a tablespoon, drop spoonful (approx. 2"-3" mound) of egg white mixture on foil pan, leaving 2"
space between each mound.

Reduce oven temperature to 200 degrees and bake meringues for 1 1/2 - 2 hours, until they are dry to the touch and can be lifted from the foil. Cool completely.
(note: after turning oven off, meringues may be left in oven, for several hours to dry, before removing from foil.)

Serve with strawberries in syrup and fresh whipped cream!! An Alsacian tradition!!

I always looked forward to holiday dinners at my Grandma's because her homemade meringues were always on the menu for dessert!! Her bowl of strawberries and brown pitcher full of homemade whipped cream 'topped' them off!!
