2 large fresh beets (peeled and sliced)
6 large potatoes (peeled and sliced)
salt, pepper
2 eggs, beaten
1 cup of milk or light cream

Directions:
Directions:
Peel and slice beets and potatoes and mix well together in a large bowl. The potatoes will take on some of the beet color making it a beautiful mix.
Add salt and pepper to taste (and a little bit more salt).

Grease large baking pan and arrange the mix of beets and potatoes all over the pan.
Bake at 450 degrees F for about 30 minutes, checking to make sure potatoes are done.

While the potatoes and beets are baking, mix the eggs and light cream (or milk) with some additional salt.
Pour over the baked beet and potato mixture and continue baking for an additional 5 minutes or so until lightly browned.
