8 large red peppers
4 cloves of garlic
olive oil
1 cup sour cream
1 cup light cream
salt, pepper, parsley

Directions:
Directions:
Cut each pepper lengthwise in two. Remove seeds and step and place open side down into a well oiled baking pan.
Broil for 15-20 minutes until browned and you see the skin peeling.
Let stand covered with wet cloth for 10 minutes.
Peel each pepper and cut into finger sized slices.
In a pan saute garlic with olive oil and add the sliced peppers. Mix well, add salt and pepper.
Add sour cream and light cream and mix well, cooking on medium heat until you reach the desired texture. Add parsley and stir well.

Serve over rice, pasta or anything you can think of.
