2 cups flour
2 tsp. baking powder
1/4 tsp. salt
3/4 cup butter, softened
1 1/4 sugar
3 eggs
1 tsp. vanilla
2/3 cup milk
1 1/2 cups dried cranberries
3/4 cup chopped pecans
3/4 cup flaked coconut

Directions:
Directions:
Grease and flour two 7x3-in. loaf pans or one 9x5x3-in. loaf pan; set aside. Stir together flour, baking powder, and salt. In large bowl beat butter and sugar until fluffy; beat in eggs and vanilla. Beat in milk and flour mixture alternately until well blended. Stir in cranberries, pecans and coconut. Spoon into prepared pan(s). Bake in 350º oven for 55 to 65 minutes or until golden and bread tests done with a pick. Remove to rack. Cool completely. Wrap and chill overnight before slicing. Slice thin and spread with Orange Butter, if desired. Makes 1 large or 2 small loaves, 24 servings.

ORANGE BUTTER: Beat together 1/2 cup softened butter, 1/4 cup powdered sugar and 2 tbsp. frozen orange juice concentrate, thawed.
