3 T soy sauce
3 T honey
2 T canola oil
1 1/2 lbs boneless, skinless, chicken breast cut up
pepper
2 cloves garlic, finely chopped
1 T grated ginger
1 bunch scallions trimmed and sliced
1 8 oz can water chestnuts
1/4 C cashews
1 head Boston or big lettuce leaves separated

Combine soy sauce Y honey in a small bowl; set aside. Heat oil in large skillet over med-high heat. Season the chicken with pepper and cook. Stirring occasionally, until it begins to brown, about 3 min. Lower heat to med stir in garlic and ginger. Add scallions and cook for 1 min. Stir in water chestnuts and half the soy sauce mixture and continue to cook until chicken is cooked through. About 4 min. Remove from heat and sprinkle with cashews. Serve a top separated lettuce leaves and drizzle with remaining soy sauce mixture.
