3 cups buttermilk
1 cup flour plus 3/4 cup
1 large white onion
4 cups vegetable oil
salt, pepper

Directions:
Directions:
Whisk together the butttermilk and flour.
Slice the onion, about 1/2 inch thick. Carefully seperate into rings.
Place onion rings into buttermilk mixture. Let sit for 2-12 hours.
Pour oil in to a heavy pot, heat over medium heat.
Spread 3/4 cup flour on a plate; season with salt and pepper. Lift rings from buttermilk, let drain, dip in the flour. Fry onion rings 2-3 at a time, turning once. Lift from oil with tongs and drain on paper towel. Season with salt and serve immediately.
