1 can pink salmon
1 small onion diced fine
1/2 c New Mexico green chile - chopped or
serrano chilie - chopped
3 eggs
6 to 8 saltine crackers
a pinch of salt
a pinch of pepper
1 lemon cut in slices

Directions:
Directions:
drain salmon in a strainer remove bones and set aside
mix all ingredients
form mixture into a patti
heat skillet add 1 tbsp oil, drop patti into heated oil and cook for about 3 minutes turn and cook for about 3 additional minutes, remove and drain on paper towels,
sprinkle with a few drops of fresh lemon juice and serve with tortillas, rice and beans

this is a great seafood dish for lent, for a lighter dish you can serve with cole slaw, enjoy
